2 pkgs semi-sweet chocolate squares, divided
¼ C butter
¾ C firmly packed brown sugar
1 t vanilla extract
½ C flour
¼ t baking powder
2 C chopped nuts (optional)
Heat oven to 350 degrees. Line a cookie sheet with either a baking mat or parchment paper. (Do not use wax paper)
Coarsely chop 8 squares of chocolate and set aside. In a stainless bowl placed on top of a pot of simmering water, place remaining chocolate and butter. Stir until melted. Stir in sugar until thoroughly combined.
Remove bowl from heat and add eggs, one at a time, until thoroughly combined. Add vanilla extract.
In a separate bowl, mix flour and baking powder together. Fold flour mixture into chocolate mixture. Stir in reserved chocolate chunks and nuts, if using.
Drop by ¼ cup measure onto prepared cookie sheet. Bake 12-13 minutes or until cookies puff and are set to the touch. Cool on cookie sheet 2 minutes and transfer to a wire rack to cool completely. Makes about 1 ½ dozen.
