2 sticks unsalted butter, room temp
1 egg yolk, only
1/4 tsp vanilla extract
1/4 tsp almond extract
1 cup sugar
2 cups flour
Preheat oven to 275 degrees. Cream butter and sugar. Beat in egg yolk and almond and vanilla extracts.
Pat dough evenly into a floured 15x10" jelly roll pan. (One with edges). I use a floured rolling pin to get it even. Sprinkle colored sprinkles on top before cooking. Bake until golden brown on the edges-but just barely. I check at 20 minutes and every few minutes after. In my oven, it takes around 30 minutes.
Once done , immediately cut with pizza cutter into squares, then diagonally across each square. Then, use a knife to cut edges that pizza cutter couldn't reach. Allow to cool completely. Remove with small spatula. Store in air-tight container. Freezes well up to one month but they never last that long in my house!
